After adding the required info in the Local Business and Organization sections of Site Settings, the selector on top says Do not publish. What does it mean and what is the sense of completing these sections if no info will be published? Thanks.

You need to fill in all bold fields.
“Do not publish” is a dropdown there, you need to open the dropdown and pick which page to publish the metadata on.
I thought it will be applied to all pages?
